The sauces run from a 1 out of 5 smoked honey and garlic that children will happily eat, through to Carolina Reaper builds we rate at 5 and mean it. Most of the range sits in the middle, because that is where a sauce gets used heavily rather than rationed.
Everything is made by hand in small batches in Busselton, Western Australia by chef Alex Gibson. The awards are blind-judged, which means the panel had no idea whose bottle they were tasting.
