Low & slow
3-2-1 BBQ Ribs
Low and slow, smoky and sticky. Classic 3-2-1 pork ribs finished with Jibba's Honey Garlic BBQ.
- Smoker 110°C
- Total ~6 hrs
- Serves 2–4
Method
- Preheat your smoker to 110°C. Remove the membrane from the back of the ribs.
- Lightly coat the ribs with yellow mustard, then season generously with MacBros Seasoning.
- 3 hours — smoke the ribs bone-side down for 3 hours.
- 2 hours — place each rack onto foil. Add the apple juice, butter and brown sugar. Wrap tightly and return to the smoker for 2 hours.
- 1 hour — carefully unwrap the ribs and return them to the smoker. Brush generously with Jibba's Honey Garlic BBQ Sauce and cook for up to another hour, glazing again as needed.
- Remove when tender and the sauce is sticky and caramelised. Rest for 10 minutes before slicing.
Jibba's TipThe 3-2-1 method is a guide. If the ribs are already beautifully tender after the wrapped stage, shorten the final cook so they don't overcook.
